Video: Rejoice with Blueberry, Peach, Avocado Ice Cream

Dear brothers and sisters,

We are delighted to share with you a recipe for Blueberry, Peach, Avocado Ice Cream. Just the thing to rejoice in  the wonder of midsummer.

We begin by creating an almond milk base. We add chia seeds for thickening. Then we add bananas, blueberries, peaches and avocado. We blend. For delight we add our Hawaiian Native Forest Honey, Vermont Maple Syrup, Vanilla Powder, Cinnamon and a pinch of Royal Himalayan Pink Crystal Salt.

Next, Hew Richards takes us along as he tells of 15 vegetables and herbs to plant midsummer. These include coriander (better known to you as cilantro), dill, carrots, and beets.

Brittany Mullins with Eating Bird Food guides us in making a delightful apple cake. It features almond flour and oat flour.

Our Victory Garden Sale includes Almond Cashew Brazil Nut Butter, Turmeric and Honey butter and Black Beans.

Donny Greens takes us a long as he introduces ducks to the food forest he created.

Recipe: Apple Cake

This delicious gluten-free apple cake is made with a blend of almond and oat flour, studded with fresh apples and has a delicious cinnamon pecan crumb topping. It’s moist, tender and the perfect fall dessert!

Ingredients:

  • 1 cup almond flour
  • 1 ½ cups oat flour
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 2 large eggs
  • ½ cup full-fat plain Greek yogurt
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¾ cup maple syrup
  • 2 cups chopped apples, I recommend Honeycrisp or Pink Lady

We’ll be visiting some organic farms and maybe a field trip to Yosemite and the High Sierras. 

Join us then in making almond butter from almonds grown by a California farming family of five generations on the land!
