Dear brothers and sisters,

Now is the time to plant for autumn and winter;so let’s get growing! As our secret ingredient, let’s add some intentionality- these times demand it!

We plant   lettuce-The American Obesity Association suggests that by 2025  50% of Americans may be obese — and predicts this will jump to 60% by 2030.

We plant kale -  because 60% of caloric content of the food we eat is ultra processed -that includes pizza, chicken nuggets and fries.

We plant chard-the rates of depression, anxiety and suicide are currently at an all-time high.

We plant  spinach because diabetes has reached epidemic proportions worldwide.One-third of Americans (115 million) are either prediabetic or diabetic.

We plant parsley because of the epidemic of autism among children.

We plant mustard greens because the US has the highest rate of cancer yet little or nothing is done as to prevention.

We plant carrots because drug overdose deaths surged nearly 30% in 2020. Think of it! There were  93,000 deaths from drug overdoses  last year, a record high,  the sharpest annual increase in at least three decades.

We plant in the hope you will get together with neighbors and friends  and plant a community garden and an edible schoolyard.

We are confident that you will come through with renewal and regeneration; one day this great land will be a garden for the American spirit.

Recipe: Vegan Corn Chowder

This Vegan Corn Chowder is full of flavour and delicious with fresh corn from the farmer’s market. Enjoy it for lunch, an appetizer or a light meal!

Ingredients

  • 1/3 cup raw cashews, soaked in water overnight then drained
  • 3/4 cup water
  • 2 tbsp vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, finely chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp herbs de Provence (can sub dried thyme)
  • 4 ears of corn, kernels removed from the cob (approx 3 cups)
  • 1 medium potato, peeled and chopped into cubes
  • 2 cups vegetable broth
  • fresh herbs to garnish (optional)
