Video: What We Can Learn From the Pandemic

Dear brothers and sisters,

Americans are the most overweight population in all of human history.

Unbelievably, almost 80 million Americans — 42 percent of the population — are obese and another 30% are overweight.Others argue this estimate is too conservative, i.e. 90% of the population are overweight. Of the remaining 10% some have a pre-existing condition that keeps them thin, others are smokers that also helps to shed excess pounds. Only the remaining 2-3% or so can be said to be healthy. Is it any wonder then that disease sweeps through a population as imbalanced as this?

In reality, then, the pandemic is one of many. There is the pandemic of diabetes, the pandemic of high blood pressure, the pandemic of heart disease and the pandemic of cancer. All stem from a profound imbalance in how we eat, live and relate to one another.

The latest data show that the U.S. life expectancy has declined over the past few years.Tragically enough this troubling decline is largely driven by deaths from drug overdose and suicide. 

That is why we maintain that the virus is but a symptom of a deeper, more profound illness.

We suggest that we heed the wake up call.Imagine getting back to a diet based upon living food.Imagine  a green drink of lettuce, kale, chard, spinach and celery with every meal.Imagine cleansing and re-creating ourselves via intermittent fasting. Imagine becoming more  vibrantly alive  via vigorous exercise.Imagine get back to the Victory Gardens that people planted during WW2. (In 1943, backyard gardens produced 40% of all vegetables consumed in the U.S).

Let’s then get together with friends and neighbors and plant  victory gardens, edible schoolyards and permaculture parks.

Let's go forward with renewal, regeneration and on to the redemption of this American earth.

Recipe: Raw Chocolate Covered Walnut Truffles

A deliciously healthy, soft, sweet, chocolate covered walnut truffle recipe.

INGREDIENT LIST:

INSTRUCTIONS:

  1. Prepare ahead by soaking your dates in water to soften them. Soaking for at least an hour should soften them enough for blending. Alternatively use pitted medjool dates and miss out the soaking period altogether.
  2. Once soaked, drain the dates thoroughly to remove any excess moisture.
  3. Blend the dates with the walnuts and vanilla extract using a hand blender or food processor, until you achieve a thoroughly blended consistency. If you like things to be a bit rustic, then you can also leave it a little chunky.
  4. Once you have blended the mixture, add the ground flax seed in, either using the blend, processor or by pressing in with a spoon.
  5. Roll into teaspoon sized balls and pop on a ceramic plate, placing them into the freezer whilst you make the chocolate covering. Freezing helps them rapidly firm up and also chills them so that the chocolate coating will quickly set when you go to coat them.
