Video: Sweet Potato, Almond & Avocado Pie

Ingredients

Crust

Living Tree alive, organic and kosher Almond Butter  1C
Flame raisins    1C
Almonds sliced  1/2C
Coconut flakes 1C

Filling

Sweet potatoes -baked   3
Avocado
Almond Butter 2C
Maple syrup     1/4 C
Hawaiian Honey       1/4C
Coconut Oil 1/4C
Juice of one lemon
Pinch of salt                                                                                                                                                                                                               
Pinch of cinnamon powder.

Instructions

Prepare the crust by blending the Flame Raisins and Almond Butter in a food processor or blender, add little water if necessary. Pour the mixture into a mixing bowl. Add the sliced almonds and coconut flakes.Mix well. Line a 7 inch pie plate with parchment paper. Knead the mixture uniformly into the pie plate. Put in a freezer.

Prepare the filling by chopping into chunks the three baked sweet potatoes and put them in a food processor or blender. Scoop out an avocado and add to the blender. Add  the maple syrup and Hawaiian Honey, juice of a  lemon, a pinch of salt and cinnamon. Blend.

Pour the filling into the pie plate and put in a freezer for four hours. It's ready to serve!

Recipe: How to Make Almond Flour Banana Bread

For anyone trying to avoid wheat/grain products, this is for you! A yummy, nutty bread that is wonderful for breakfast and snacks.

Ingredients:

  • cooking spray

  • 3 eggs, beaten

  • 1 tablespoon apple cider vinegar

  • 3 bananas, mashed

  • ¼ cup coconut oil, melted

  • ¼ cup honey

  • 1 teaspoon vanilla extract

  • 3 cups almond flour

  • 1 teaspoon ground cinnamon

  • ¾ teaspoon baking powder

  • ½ teaspoon ground nutmeg

  • ½ teaspoon salt
