Video: Ebullient Kale Salad with Almond, Cashew, Black Tahini Dressing

It is our delight to bring you a recipe for a kale salad. Kale is among the healthiest of vegetables. It is a super food. It is nutrient rich, abounding in fiber and vitamins. It contains powerful antioxidants which eliminate toxins. It helps to protect against various cancers and against cardiovascular disease. It is great for digestion. It has more calcium than milk. It slows down aging and repairs DNA, the blueprint of ourselves.

Please watch as we create a salad from various varieties of kale. We toss in diced medjool dates and cranberries. We top with a dressing made from our Black Sesame Tahini.

Recipe: Macadamia Butter Cookies with Dried Cranberries

We love these thick, satisfying cookies as humble as peanut butter cookies but not as crumbly. Dried cranberries provide a slightly tart counterpoint to the macadamia nuts' richness. The dough is somewhat sticky; chilling it briefly makes handling easier.

Ingredients

  • ⅔ cup macadamia nuts
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅛ teaspoon ground nutmeg
  • ½ cup dried cranberries, chopped
  • 1 tablespoon granulated sugar

Instructions

  • Preheat oven to 375°.

  • Place nuts in a food processor; process until smooth (about 2 minutes), scraping sides of bowl once. Combine macadamia butter, 1/2 cup granulated sugar, and brown sugar in a large bowl; beat with a mixer at medium speed. Add vanilla and egg; beat well.

In our proprietary process, we make the pine nut butter slowly, over several days.  We slice the nuts and never grind.  This preserves the flavors and properties of the raw pine nut.  We make it frequently, in small batches, so it's always fresh and alive.

Siberian pine nuts are quite different from the pine nuts you find in stores. The latter are imported from China and are a species of Korean pine nut, Pinus Koraiensus. Siberian pine nuts are a different species, Pinus Sibirica. They are the fruits of a majestic and beautiful tree.
