We begin with a delightful recipe for coconut,chia seed pudding. Its made in a blender; simplicity itself. We start by creating Brazil nut milk, it will be our base. We add chia seeds and coconut flakes along with blueberries and blackberries and blend.The result is vital, alive and delicious.

Next, Ben with Growveg tells us how to grow perfect potatoes. It is all so easy.  We urge you to consider digging up your backyard or joining a community garden. Potatoes are so bountiful and Ben's enthusiasm is contagious.

It is our pleasure to bring you a healthy carrot cake with maple cream cheese frosting. (There are vegan options.) The principle ingredients are carrots, almond flour and shredded coconut.

Recipe: Healthy Gluten Free Carrot Cake with Maple Cream Cheese Frosting (Paleo & Vegan Options!)

This is a seriously amazing carrot cake, and you would never know that it's gluten free and made with no refined sugar!! It's a healthy carrot cake that's a cinch to make, with a classic flavor and ultra moist texture. A two-ingredient maple cream cheese frosting takes it over the top.

Ingredients:

  • Cooking spray or oil, for pan
  • cup currants OR ½ cup raisins
  • 3 medium carrots (7-8oz /220g), peeled, trimmed and coarsely chopped
  • 2 large eggs
  • ¼ cup plus 2 tablespoons maple syrup
  • ¼ cup unsweetened applesauce
  • ¼ cup milk or nut milk
  • ¼ cup coconut oil, melted and cooled slightly (or you can use butter or a neutral vegetable oil)
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • teaspoon ground nutmeg
  • ¾ teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 1 ½ cups (165g) almond flour
  • ½ cup (42g) unsweetened shredded coconut
  • 1 teaspoon baking powder
