Video: Celebrate Summer with Mango, Fig, Apricot, Peach & Almond Ice Cream

The story of how John Muir, the great naturalist, fought to preserve Hetch Hetchy( a magnificent river valley just north of Yosemite) should inspire every American. Despite his efforts, a dam was created and the valley inundated. It remains to this day submerged under hundreds of feet of water.

We say take up John Muir’s last struggle and restore Hetch Hetchy, the glorious valley. Perhaps this will presage the rebirth and renewal of this great land.

Why not create a mango, fig, apricot, peach, almond ice cream? Think of it as providing a taste of the bountifulness of summer.

We begin by preparing an almond milk base by adding a heaping tablespoon of almond butter to a pint of water. We blend - it flashes into a white milk. We add some chia seeds for thickening.

We then chop up a mango, some figs, peaches and apricots and put them in a food processor.We add the almond milk and then honey, maple syrup, a lemon and finally a pinch of Royal Himalayan Pink Crystal Salt to elicit the flavors. Then some frozen bananas. We blend - Voilà: A magnificent ice cream to celebrate with family and friends.

Next, Ben with GrowVeg guides us in growing super salads in containers. This is especially relevant because most of us have very little growing space. Here is a way to grow endless salads. He adjures us to grow veggies such as loose leaf lettuce, chard and spinach. These are examples of cut and come again veggies. The outer most leaves can be harvested while the center is left. The leaves will grow back rapidly. He also recommends planting every 3 to 4 weeks for a continuous, bountiful harvest.

Next, the Millennial Gardener tells us how wonderful it is to plant in July. This will ensure fresh veggies all the way into Fall and Winter. First, there are string beans that can be planted directly. Potatoes are a must. They are so easy to grow. Then there is basil. Many of us have planted it in the Spring. It's time to replant.

After all, it's one of the easiest vegetables to grow. He also recommends Romain lettuce to be started indoors and transplanted out in mid August. He tells us that a Romaine planted in Fall is sweet and delicious. Finally one should plant another crop of cucumbers and zucchini. They will yield a bountiful harvest before the first frost.

The next video celebrates 25 years of the magnificent edible schoolyard at Martin Luther King Jr. Middle School in Berkeley. It is a fine example of what students can accomplish working together and with vibrant plants and living soil. Of course the garden yields magnificent, organic school lunches.
