Product Description

Quinoa was of great nutritional importance in pre-Columbian Andean civilizations, being secondary only to the potato, and followed in third place by corn. In contemporary times this crop has come to be highly appreciated for its nutritional value, as its protein content (12%­18%) is very high. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete foodstuff. This means it takes less quinoa protein to meet one’s needs than wheat protein. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten free and considered easy to digest.

Lastly, quinoa may be germinated in its raw form to boost its nutritional value. Germination activates its natural enzymes and multiplies its vitamin and mineral content. Its easy to sprout. Try it! You’ll have sprouts in a day or two. Besides enhancing its nutritional value, sprouting softens the grains, making them suitable to be tossed into salads and other alive foods.

Basic Quinoa Recipe (for those on the way to live food):

  • Soak the quinoa first for 15 min – 1/2 hour in the pot you plan to cook it in.
  • Stir it with your hand, and carefully pour off the rinsing water, using a seive at the last.
  • Put the quinoa back in the pot, add more water, and rinse again two or three more times.
  • Drain well in the seive.
  • Place quinoa in the pot, add the water & salt – filtered or spring water are best.
  • Bring to a boil, cover with a tight fitting lid.
  • Turn the heat down to simmer, cook for 20 minutes.
  • Remove from heat and allow to sit five minutes with lid on.
  • Fluff gently with a fork and serve.
Pamela’s cucumber, onion  quinoa 
I use only organic vegetables where available
1 lg or 2 med English cucumbers –  cut in half lengthwise and then cut in 1/4″ slices
1 med/lg red onion – small dice
The Brine
1/2 C Braggs apple cider vinegar (please do not substitute. This is amazing vinegar)
2 T distilled water
1 t Living Tree agave nectar,  pepper, sea salt, flax seeds,  sesame seeds (all freshly ground)
1 1/2 C cooked and cooled quinoa(Living Tree) – I like to mix white and red for the look of it.  (OR try just sprouting the quinoa.  A little crunchier and delicious!!)
In a glass bowl combine the cucumbers and onions.  Add brine. Cover and refrigerate for 2-3 hours.  Add quinoa. Toss together. Let marinate another 5-10 minutes.  Drain most of the brine (don’t throw away the brine,  add  Living Tree Olive Oil for a delicious vinaigrette for another day)

Serve at once.  Particularly refreshing during the hot Summer months.

Of course you can adjust ingredients to taste.  For variety I have added a finely minced jalapeno, or a julienned sweet red pepper.  Enjoy!

    I want you to know how very much I am enjoying every delicious food I have purchased from you! I have been sharing with everyone I know. My daughter and her family were here visiting from Illinois this week. My granddaughter is an athlete and also a vegetarian. I will be sending her many of your foods next month when she returns to school. I made a tabbouleh like salad with sprouted quinoa. It was marvelous. I did a bowtie pasta with your spectacular pistachio pesto. I made hummus with the black tahini and organic black beans and of course your marvelous olive oil.

    I’m really excited to have found your company. I’m a new customer, but am very pleased with the extremely good quality of the products so far. The Organic Cranberries sweetened with apple juice are delectable. I’ve tried dried cranberries before, but have never found anything like these that you sell. They are so moist, tender, and flavorful. Just the right balance of sweetness and tartness. Yummy!
    The Organic Halawi dates and the Organic Thompson Raisins are fantastic, and I’m very pleased to be able to buy these products that come from California farmers. The Organic Quinoa is delicious and extremely clean (no small stones as is often found in bulk bin quinoa). I’m looking forward to trying the Organic Amaranth and “truly wild” Real Wild Rice harvested by the Ojibwa native Americans. To be able to buy rice such as this, as such a good price, is fantastic!!
    I don’t want to forget the black sesame seeds. They are incredibly flavorful and a perfect texture. I’ve never found sesame seeds before that I enjoyed just eating by the spoonful right out of the bag,
