Recipe: Raw Gingerbread Cookies

I have a confession: these are the easiest gingerbread cookies you will ever make. That translates to these are the best gingerbread cookies to make to minimize the amount of time it takes to get the gingerbread cookie into your mouth. Because that’s the main point of cookies right? And to taste good. They always have to taste good.

Yields 24 cookies

Healthy, gingerbread cookies made using raw ingredients and no refined sugar. The perfect, signature gingerbread flavour without the unwanted fat and sugar.

Ingredients

15 Medjool dates, pitted
1/4 cup blackstrap molasses
1 1/2 cup oats
2 cups almonds
3/4 cup walnuts
3 tbsp cinnamon
2 tbsp ginger
1/2 tsp nutmeg
2-3 tbsp water

Instructions

Combine all of the ingredients in a food processor and blend until the mixture forms into a ball. Add in additional water 1 tablespoon at a time, if the mixture isn’t coming together well.
Continue to blend until the mixture turns dark and you can’t see many of the nut pieces remaining.
Roll out between two pieces of baking paper to about 1 centimeter thick, and then use your choice of cookie cutter to cut out the cookies.
Place in an airtight container and store in the fridge.

Tomato Halves (California Grown) – Dried Organic & Salt Free – New Crop!


We are delighted to offer you a tomato grown in California and free of salt. Previously we were offering tomatoes to which salt was added as a natural preservative.

The tomatoes are dehydrated for 1-8 hours at 180F. If the day time temperature is greater than 100F and humidity is low, then this step is skipped. The tomatoes are dried in the sun for 1-4 days. They are then dried at ambient temperature for an additional 3-10 days.

We suggest soaking overnight. They will blossom into saucer shapes. Pour off the soak water, then rinse in a strainer under a faucet. Toss into salads or pasta! Place them around a bowl of Living Tree Alive Olive Oil as a dip. Your friends will delight in these hors d’oeuvres.
