Health statistics clearly show Americans have been getting increasingly sicker over the past few decades. Life expectancy is dropping. Chronic diseases are rampant, and children are increasingly coming down with diseases that in the past did not arise until much later in life.

Never before in American history has there been anything like the epidemic of obesity, the epidemic of type 2 diabetes, the epidemic of cancer, the epidemic of heart disease, the epidemic of depression, the epidemic of liver damage, the epidemic of opioids, the epidemic of sexually transmitted disease, the epidemic of Alzheimer’s, and the epidemic of suicides- all concurrently. This amidst the deafening silence of social isolation and loneliness such has never before been seen.

There is no question in my mind that a causal factor is the increasingly mechanistic way we live, beginning with the food we eat.Think of it, at no time in human history has food been more lacking in vitality- adulterated, pesticide laden and filled with chemical compounds with no counterpart in nature. As if this weren’t enough, there’s the tsunami of GMO’s. But here’s Joel Fuhrman telling it eloquently and knowledgeably.

Lemon Lime Cheesecake

This “cheesecake” is made almost entirely out of NUTS. Mainly almonds! And it still surprises me even after years of making nut-based recipes.

I decided to make another low-carb ALMOND cream cheesecake, almost just like I did in my New York Cheesecake. Almost, but this time I added just a half cup of cashews, because I LOVE THEM (they’re sooo creamy sweet and delicious.)

BUT If you don’t wanna use cashews, you can just use all almonds — specifically blanched almonds, which is almonds that have the skin removed (so the cream isn’t speckled brown.

Prep Time 30 minutes
Cook Time 0 minutes
Passive Time 2 hours

Ingredients
Crust

1 1/2 cups almonds
2 Tbs coconut oil
Pinch of salt
Dash of pure stevia powder (see notes for sub)

Cheesecake Filling

1 1/2 cups blanched almonds
1/2 cup raw cashews or more almonds
1/2 cup + 2 Tbs canned coconut milk
1/4 tsp pure stevia powder to taste (see notes for sub)
10 Tbs coconut oil
1 Tbs vanilla extract
Pinch of salt
