Best of Italy Wrap

Note: This recipe is truly the best of Italy and is a 5 star creation. Prepare the sprouted Buckwheat Groats, Sun Dried Tomato Wrap, Fermented Sun Dried Tomato Cheese, and the Sautéed Marinade Garnish on the first day. Keep in mind that the Buckwheat Groats can take 24 to 48 hours to sprout.

Buckwheat Groats Ingredients:
1 cup Red Mill organic whole grain buckwheat

Directions:

Note: 1 cup of buckwheat groats will expand into 2 1/3 cups after they have sprouted.

Take the cup of buckwheat and place it in a strainer. Rinse it with filtered water. Place them into a mixing bowl. Fill the bowl with filtered water and let soak for 15 to 20 minutes maximum. Pour them back into the strainer and rinse again until the water runs clear. Set the strainer inside a measuring cup. Place them on the counter and cover them with a cheese cloth. Rinse the buckwheat in strainer with filtered water 3 to 4 times a day for 24 hours. If you live in a colder climate, it may take up to 48 hours for them to sprout. Make sure to keep rinsing them until they sprout. As soon as you see the sprouts coming out the ends, they are finished sprouting.

Wrap Ingredients:
1 cup sun dried tomatoes (Living Tree Community Foods)
1 cup filtered water
¾ cup peeled cubed zucchini
1 cup flax seed flour
1 tsp. onion powder
1 tsp. garlic powder
¾ cup chopped basil leaves
2 tbsp. nutritional yeast
¾ tsp. Himalayan salt
2 tbsp. California Heritage olive oil (Living Tree Community Foods)
¼ cup Organic Maple Syrup
½ tsp. cayenne pepper (Living Tree Community Foods)
¼ cup hemp seeds (Living Tree Community Foods)
1 tsp. Bragg’s Apple Cider Vinegar

We’ve always regarded fasting as the royal road to health. But in the intensity of the industrial world, few of us are able to take time off for a prolonged fast. Here’s a sensible compromise. Our glorious intern, Marinas, will tell you about it.

Intermittent Fasting


Intermittent fasting is a pattern of scheduled meals that allows you to get the most out of them. It does not change what you eat, but when you eat it. For example, a daily intermittent fasting schedule could consist of eating two 1000 calories meals at 1pm and 8pm and then fasting until 1pm of the next day. This would allow you to remain eating a 2,000 calories diet, but in a different pattern schedule. But, why should you change your eating pattern to include fasting?

Your body takes 3-5 hours in processing the food that you have eaten. When your body is processing the food, the insulin levels rise and thus, it is difficult for your body to burn, After the eating period of your day, let’s say 1pm-8pm, your body’s insulin level decrease and after 12 hours, the fasted state begins. During the fasting state, your body is able to burn fat that before was inaccessible. In the long term, your body would reduce in fat percentage while maintaining the muscle mass. In fact, this 16-hour fasting period pattern is greatly used as a weight loss tool because by doing fewer meals, there may be a reduction in calorie intake facilitating weight loss. Additionally to a lower calorie intake, there are some chemical changes in the body too. Some of these changes include the decline of insulin levels in the body, the increase in the production of growth hormones and the fat burning hormone norepinephrine. These changes in hormones increase the metabolic rate by 3.6%-14%.

Besides being a tool to lose weight, intermittent fasting also allows you to make your lifestyle simpler by allowing you to plan and cook for fewer meals. Some other benefits of intermittent fasting include: insulin resistance by reduction of the sugar percentage in your blood, reduction in the markers of inflammation, improvement of heart health by the increase of LDL cholesterol, triglycerides and blood sugar, improvement of brain health by the increase of the hormone BDNF, anti-aging and cancer prevention. Overall, these benefits can contribute to prevention of type 2 diabetes, cancer, Alzheimer, and heart diseases.

There are different ways to fast in which the, some popular patterns are:
• 16/8: This pattern involves 16 hours of fasting and 8 hours of eating every-day as described in the example above. Generally, this pattern is done by skipping breakfast and then eating two or three meals in an 8-hour period and then fasting for the remaining 16 hours.
• 20/4: This pattern involves a 20 hours of fasting and 4 hours of eating. During the eating period it is recommendable to eat one or two meals.

Other fasting patterns that involve fasting for 24-hours or more are:
• 24-hour: This pattern consists of fasting for 24-hours from dinner-to-dinner or lunch-to-lunch. This pattern is generally done two or three times a day.
• 5-2: This pattern consists of eating regularly 5 days and then fasting for 2 days. However, on the two fasting days a meal of up to 500 calories can be consumed.
• 36-hour: This pattern involves fasting for a whole day. For example, eating the last dinner on day one and eating again until the breakfast of day three.

At the beginning it may sound hard to fast, specially if you are very used to your eating schedule. But once you get into the habit after a few days, your body can easily adapt to the new schedule. As seen above, fasting offers many flexible schedules that you can build your own. On the beginning, you may experience headeaches and constipation during the fasting period. To aliviate the simptoms, drink plenty of water, minral water, coffee or non-caloric drinks. Finally, it is important to mention that it is not recommended to eat meals composed of process foods. Instead, your meal should include green vegetables, free range chicken, nuts, eggs, butter, whey protein, avocado, and coconut oil.

Intermittent fasting allows your body to use the food you eat in a more effective manner. In the fasting period, your body will learn to obtain its energy from stored fat because it does not have a constant supply of calories. Intermittent fasting can thus, allow you to loose weight by maintaining muscle mass, and to improve your mental and body health.
