We began making almond butter over 25 years ago. Over the years, we have developed a proprietary process: we make the almond butter slowly, over several days. We slice the almonds and never grind them, which exposes the nut to the least heat possible to keep the flavors and properties of the raw nut intact. We make it frequently, in small batches, so it’s fresh and alive.

Tahini breaks out as a Mainstream Ingredient, as consumers look for more unique foods to try. Use it in alive pies, yogurt bars and smoothies. Think of tahini date cookies; combine with cooked chickpeas for hummus, combine with honey for halva.

Made from alive, organic sesame seeds grown by Mexican family farmers. We make our tahini slowly, over several days; we slice, we do not grind.

We use mechanically hulled sesame seeds.

Recipe: Coconut Butter Crunch

by Master Live Food Chef Barbara Kessler of Rawfully Tempting

Mixture #1
1 1/2 cups Coconut butter or coconut cream/manna
1/4 cup cacao butter, chopped
1T cashew or almond butter
1 tablespoon coconut oil
3 -4 Tablespoons coconut sugar, powdered
1 t vanilla extract or 4 drops Medicine Flower caramel extract
Pinch of Himalayan salt
2 1/2 cups raw pecans and almonds or other nut combo

Mixture #2
1/4 cup cacao paste or dark chocolate, chopped
2T cacao butter,chopped
1T coconut sugar, powdered

1/2 cup or more unsweetened shredded coconut

Process sugar in a food processor or mini grinder.

Mixture #1
Melt Coconut butter in metal bowl over bowl of very hot water.
Add coconut oil, Nut butter, salt and sugar.
Melt. Beat or blend until creamy.
Stir chopped nuts into mixture until well coated.

Mixture #2
Melt cacao paste and remaining cacao butter in another bowl.
Add remaining powdered sugar and mix well.

Fold Mixture #2 into Mixture #1, and gently swirl, don’t mix.
Spread mixture evenly on a cookie sheet covered with parchment paper.
Garnish generously with shredded coconut and freeze 30 minutes.

Remove and break into bite-sized pieces. Store in airtight container in freezer or refrigerator.

Rather than swirling Mixture #2 into Mixture #1, pour #1 onto sheet as directed. Top with shredded coconut and freeze.
When firm, drizzle melted Mixture #2 over hardened bark and freeze until firm. Break into pieces and serve.

Use any combination of nuts.
Use stevia instead of sugar.
Add other extracts such as hazelnut or mint.

Add raisins or dried fruit.

We’ve named it after Walt Whitman who wrote,
