Recipe: Butternut Squash Bisque with Turmeric Roasted Garbanzos

Soup is one of my favorite meals! I love making soup as well-it’s the type of dish that can be very complex or very very simple with equally delicious results. It’s also one of the easiest things to make without a recipe. “Winging it” while making soup is fun, I swear! This recipe is a healing blended vegetable soup-hydrating, easy to digest and quick to make.
Delicious butternut squash is full of vitamin E, thiamin, niacin, vitamin B-6, folate, pantothenic acid, and manganese. A cup of cubed butternut squash also provides 582 mg of potassium, (more than the amount available in a banana) and has a wonderful mildly sweet flavor. It cooks quickly and is easy to peel and cut as well.

Ingredients
Butternut Squash Bisque

1 tablespoon coconut oil
1 cup celery, chopped
1 cup carrot, peeled and chopped
1 cup onion, peeled and chopped
1 clove garlic, minced
1 medium butternut squash, peeled, seeded and chopped
4 cups water or vegetable stock
½ teaspoon salt
2 teaspoons za’atar (optional)
1 tablespoon lemon juice

Turmeric & Black Pepper Roasted Chickpeas

15 oz (about 2 cups or 1 can) chickpeas, canned or cooked
1 tablespoon coconut oil
¼ teaspoon sea salt
½ teaspoon turmeric
¼ teaspoon black pepper

We began making almond butter over 25 years ago. Over the years, we have developed a proprietary process: we make the almond butter slowly, over several days. We slice the almonds and never grind them, which exposes the nut to the least heat possible to keep the flavors and properties of the raw nut intact. We make it frequently, in small batches, so it’s fresh and alive.

Grate and add to melted cacao paste along with a sweetener such as honey, agave or palm nectar crystals to make a delightful chocolate.
